Light and lazy supper: spinach, beet and shrimp salad

Tonight I got home late from work and didn’t feel like going to the grocery store to pick up fresh vegetables. But I managed to pull together a simple, healthy dinner from ingredients in my fridge and freezer. Although fresh fruit, fish and vegetables are best, frozen and packaged food also count towards your daily vitamins. Think I may have been inspired after reading about wartime nutrition yesterday.

I used some of my favorite rainy day ingredients:

  • Trader Joe’s Steamed and Peeled Baby Beets – Confession I’m scared to buy fresh beetroot because it looks like it would be a pain to prepare. But one of these days I’ll get some from the farmers market.
  • Frozen peas – Not just for icing injuries, frozen peas can be cooked in about 3 minutes and have high Vitamin A, C and iron content.
  • Frozen shrimp – I thawed these and cooked them in a little olive oil with garlic and chilli flakes.

My fresh food additions were chopped spinach, feta cheese and lemon. And of course I added black pepper and extra virgin olive oil, my two kitchen essentials
